  • 1 cup bajra (pearl millet) flour
  • 2 tbsp besan (gram flour)
  • 1 small finely chopped onion
  • 1-2 chopped green chilies
  • ½ tsp grated ginger
  • 2 tbsp chopped coriander leaves
  • Salt
  • Water (as required)
  • Oil/Ghee

Bajra Chilla Recipe (Step-by-Step)

  • Step 1: Start by gathering all the ingredients required for the batter and cooking. You will need one cup bajra (pearl millet) flour, two tbsp besan (gram flour, optional), one small finely chopped onion, one to two green chilies finely chopped, half a tsp grated ginger, two tbsp chopped coriander leaves, salt to taste and water as needed to make a smooth batter. Keep oil or ghee ready for greasing and cooking.
  • Step 2: Combine the bajra flour and besan in a mixing bowl. Add water slowly while whisking continuously to make a smooth and lump-free batter. The consistency should be like that of a pancake batter – neither too thick nor too thin. Once the batter is ready, add finely chopped onions, green chilies, grated ginger, chopped coriander leaves, and salt. Mix everything well so that the flavors are evenly distributed. Let the batter rest for 10-15 minutes so that the ingredients are well combined.
  • Step 3: Place a non-stick or iron tawa on medium flame. Once the tawa is hot, lightly grease it with a few drops of oil or ghee. Spread the oil evenly with a brush or tissue to prevent the chilla from sticking.
  • Step 4: Take a ladle of batter and pour it into the center of the tawa. Using the back of the spoon, spread the batter in a circular motion to make thin, round pancakes. Keep the thickness consistent for proper cooking.
  • Step 5: Let the cheela cook on a medium flame for 2-3 minutes or until the edges start to rise and the bottom side turns golden brown. Drizzle a little oil or ghee on the edges and surface of the cheela to enhance the flavor and ensure uniform cooking.
  • Step 6: When the bottom side is cooked, carefully flip the cheela. Cook on the other side for 1-2 minutes till it turns golden and crispy. Make sure both sides are cooked thoroughly before removing from the pan.
  • Step 7: Repeat the process with the remaining batter, lightly greasing the pan each time before pouring the batter. Adjust the heat as needed to prevent the chillas from burning.
  • Step 8: Serve the freshly prepared bajra cheelas hot with your favorite chutney, yogurt, or pickle. They taste best when eaten immediately while they are still crispy and hot.
