High Protein Moong Dal Idli Recipe (A Step-By-Step Guide)
- To begin with, take one cup of yellow moong dal and wash it thoroughly in water to remove impurities. Soak the Dal in water for about two hours. After soaking, drain the water completely.
- Put the moong dal in a blender along with a small piece of ginger, two green chilies, and two tbsp curd.
- Blend everything to form a smooth, thick paste, making sure there are no lumps. Once ready, pour this batter into a large mixing bowl.
- Next, prepare the vegetables. Heat a tablespoon of oil in a pan over medium heat. Add finely chopped onions, capsicum, and carrots to the pan. Sprinkle a pinch of salt to enhance their taste.
- Saute the vegetables for about two to three minutes until they soften a bit but retain their crispness. Remove from the heat and let the vegetables cool.
- Now, come back to the batter. Add a pinch of turmeric powder and salt according to your taste to the moong dal mixture. Mix it well.
- Just before steaming the idlis, add a teaspoon of Eno fruit salt to the batter. Stir vigorously in one direction for about a minute. This will make the batter light and airy, which is essential for fluffy idlis.
- Fill your idli steamer or a large pan with water and bring it to a gentle boil over medium heat. Lightly grease the idli molds with a few drops of oil to prevent sticking.
- Pour the batter into each mold and fill them evenly. To enhance the taste and texture, you can sprinkle fried vegetables on top of the batter.
- Place the filled molds in the steamer and cover them with a lid. Let the idlis steam for 10 to 15 minutes. To check if they are cooked, insert a toothpick or knife in the center of the idli. If it comes out clean, they are fully cooked. Switch off the heat and let the idlis cool for five minutes before carefully removing them from the molds.
- Serve your hot and fluffy moong dal idlis with spicy green chutney, coconut chutney, or any chutney of your choice. These idlis are soft, delicious, and full of nutrients, making them a perfect complement to a healthy lifestyle.
