Heat some oil in a non-stick pan. Then add dried red chillies, urad dal, and curry leaves. After this, Fry on medium heat for about 30 seconds.

Add grated beetroot, coconut, and salt to the pan. Cook for up to 5 minutes. Make sure to stir occasionally.
Step 3
Take the pan off the flame and let the mixture cool completely. Then, blend it with 2 tbsp water till it becomes smooth.
Step 4
After this, heat some oil in a small pan and add mustard seeds to it. When they crackle, pour this tempering over the beetroot paste.
Step 5
Now your tasty beetroot chutney is ready. Enjoy the chutney with your favorite snack or meal. You can store the chutney that will remain in an airtight container.
